Are you fed up with eating the same old boring salad? Try this tasty recipe loaded with healthy fresh veggies, which is super quick to prepare.
2 cups carrots cut into matchsticks or shredded
½ head each of green and purple cabbage, shredded
1-2 cups roasted cashew nuts
1 cup chopped fresh cilantro
2 cups cooked edamame
2 cups crunchy chow mein noodles
½ cup sliced green onions
Your choice of protein, such as chicken, tofu or prawns
2tbsp sesame oil
¼ cup olive oil
3tbsp white vinegar
A pinch of garlic powder
¼ cup of mayonnaise or Greek yoghurt (this is optional and will create a creamier dressing)
- Place all the dressing ingredients into a screw-topped jar and shake well until smooth.
- Toss together all the salad ingredients and drizzle with the dressing. Serve straight away.
