Garlic Kale and Parmesan Pasta

This pasta recipe is tasty and quick to prepare. Make it a complete meal by adding some grilled Haloumi, a chopped hard-boiled egg or some extra veggies, or whatever takes your fancy.


250g angel hair pasta

250g kale

2 minced garlic cloves

2tbsp olive oil

¼ cup grated Parmesan

2tbsp butter

Salt and pepper

Pinch of red pepper flakes (optional)


  1. Remove woody stems from kale and tear into 3 or 4cm pieces. Rinse kale well and allow to drain.
  2. Bring a large pot of salted water to the boil and cook the pasta following packet directions before draining and setting aside. While pasta is cooking, add the minced garlic and olive oil and butter to another large skillet. Cook over medium heat for one or two minutes until the garlic is fragrant, then add the kale and continue to cook until it has wilted, for approximately 5 to 7 minutes. Remove from heat.
  3. Add the pasta to the kale and toss together. Allow to cool slightly before seasoning to taste. Add the Parmesan cheese and mix, and top with a pinch of red pepper flakes if using.
