Ripe Caramelised Peaches and Rosemary

Make the most of seasonal fresh peaches with this simple, tasty recipe.

4 ripe peaches, halved and pitted

¼ cup olive oil

2tbsp orange juice

¼ cup honey

2tsp fresh rosemary

  1. Heat the oil in a 30 cm skillet over medium-high heat, and when hot, stir in the honey. Add the peaches, cut sides down, reduce heat and cook for five minutes until they start to soften and brown. Move the peaches around the skillet occasionally to avoid them sticking.
  2. Reduce heat to low and add rosemary and orange juice, swirling gently to mix evenly. Carefully turn the peaches over and cook for another five minutes.
  3. Place two peach halves on each plate and spoon over honey and rosemary mixture. Serve with whipped cream if desired and enjoy.
