This easy recipe only requires one pan and is great for fast mid-week suppers.
Ingredients
4 x 250g salmon fillets (skin and bones removed)
1tbsp sesame oil
120g runny honey
500ml vegetable stock
150g white miso
15g grated ginger
2tbsp lemon juice
¼ bunch of finely chopped coriander
2tsp each of black and white sesame seeds
2 bunches broccolini, halved lengthwise
3 finely chopped garlic cloves
1 long finely chopped red chilli
21/2tbsp cooking sake
Instructions
- Preheat oven to 220°C and heat a large ovenproof, non-stick frying pan over medium-high heat. Add garlic, sesame oil, ginger and honey and cook while stirring for one or two minutes until fragrant. Stir in sake, lemon juice, miso and stock and bring to boil.
- Turn off the heat and add the broccoli and salmon, turning the salmon to coat in miso sauce.
- Cook in the oven for 12 to 15 minutes until done to your preference. Scatter over sesame seeds, coriander and chilli and serve with rice.
