This classic and easy recipe is packed with fresh herbs.
1.5kg Desiree potatoes cut into 1cm pieces
1/3 cup each of fresh dill and mint leaves
½ cup fresh parsley leaves
4 thinly sliced green onions
2tbsp cider vinegar
1tbsp lemon juice
125ml vegetable oil
1tbsp wholegrain mustard
1 egg yolk
- Cook potatoes in salted water until just tender, drain and transfer to a large bowl.
- Make mayonnaise by whisking juice and egg yok together until creamy and pale. Gradually whisk in oil until creamy and thick. Stir in mustard and season to taste.
- Add vinegar to warm potatoes and gently mix and season to taste. Add half the herbs, onions and mayonnaise to potatoes and mix gently. Drizzle remaining mayonnaise on top with the rest of the herbs and onions.
